It can be used to prevent pickles from discoloring, remove the bitterness, and keep them from falling apart when cooked.
Prevents discoloration of pickles
To pickle eggplant, the eggplant is first soaked in a slightly heated alum solution (2 to 20 g per 1 kg of eggplant dissolved in water).
●To remove bitterness
You can remove the bitterness from vegetables with a strong bitterness, such as lotus root, taro, and burdock, as well as chestnuts, by peeling them and then soaking them for 2 to 3 hours in a solution of about 2g of roasted alum dissolved in 2L of water.
●Prevents food from falling apart when cooked.
For foods that easily fall apart when boiled, such as chestnuts, potatoes, beans, and kelp, dissolve about 2 to 10 g of calcined alum in 2 liters of water, soak for 2 to 3 hours, rinse with water, and then cook.
