What is Sanuki Mochi Barley Daishimochi?
This type of barley (naked barley) has strong glutinous properties and is named "Daishimochi" after Kobo Daishi, whose birthplace is Zentsuji City.

Please prepare the broth and seasoning before boiling the noodles. *Caution: Use hot water.
(1) In a pot as large as possible, bring at least 2 liters of water to a boil for one bag (200 g, 2 servings) and add the noodles separately.
(2) Gently loosen the noodles with chopsticks, and boil them to your desired doneness without adding additional water, being careful not to let the water boil over.
(3) Quickly drain the noodles in a colander and rinse thoroughly 2-3 times with cold water to remove any stickiness.
